Recipe: Gingerbread Chocolate Chip Cake w/Cream Cheese Frosting

Hi there! I love this time of the year because holiday treats are some of my most favorite things in life 🙂 If you’ve read my previous blog posts, I’ve talked about how big of a Pumpkin Spiced Latte fan I am, but did I tell you how much bigger of a Gingerbread Latte fan I am??? 🙂 You see, because of my love for seasonal holiday blends, I have also equally found love in their pastry counterparts… like for example, this easy and very delicious (box) recipe I want to share with you using Trader Joe’s Gingerbread Cake Mix! I added my own twist to it and I just couldn’t believe how delicious, moist, and kid approved my version of this Gingerbread Cake turned out! 🙂 Enough of the chitter chatter and let’s get started!

Ingredients:

Apart from this box cake mix, you will need 1 large egg, 1/3 cup of oil, and 3/4 cups of water as suggested in the packaging. **Optional: A handful of regular sized semi-sweet chocolate chips, ready made cream cheese frosting, and ground nutmeg.**

Directions:

First, preheat your oven to 350 degrees. Then, in a bowl you will add the cake mix, egg, oil, and water. Using a whisk, mix all of the ingredients together until fully combined. Be careful as to not over mix your concoction.

Next, spray your pan with cooking spray to avoid having the cake stick to your pan. Then, pour your mixture in to the pan and place your chocolate chips on top. Go ahead and give it a gentle push so the chips doesn’t stick out too much. Then give your pan a few taps to evenly distribute the batter.

Bake at 350 degrees for about 25 to 30 minutes depending on your oven. Mine baked for 25 minutes and it had the perfect consistency I was looking for … Crunchy on the sides, but soft and moist on the inside! You can leave it as is or you can be extra like me, so …

After letting the gingerbread cake completely cool down, you can finish it off by adding cream cheese frosting on top and sprinkling some ground nutmeg too! 🙂

Finally, cut it into square sizes, serve, and dig in! 🙂

I really appreciate how this cake mix had a good amount of crystalized ginger pieces and its combination with chocolate and cream cheese played out very well! It satisfied both my craving for gingerbread and my sweet tooth! As you can see, I gave myself 2 slices to indulge with … it was that yummy! 😋 In fact, Yuna ate half of a slice (I try to avoid giving her too much sugar) and was asking for more! So, I feel accomplished for having gotten the seal of kid approval! Hahaha! 🙂

It’s best paired with coffee or tea, so maybe the next time you’re having company over … You can make them this and serve it with their hot beverage of choice! I promise it won’t disappoint! Unless, of course, they don’t like the taste of gingerbread or holiday spice!!!
